Mexican Madness seasoned Tilapia with Sauteed Shrimp Salsa and Pineapple Almond Rice
4 each 6-7oz fresh Tilapia filets
2-3 Tbsp Jack Macs Mexican Madness
1/2 pound 21-25 shrimp, peeled and deviened
1-2 tsp Jack Macs Mexican Madness
olive oil as needed
2 Tbsp garlic, minced
2 cups tomato, diced
1/2 cup red onion, diced
1/4 cup cilantro, chopped
1/4 cup tequilla
2 cups cooked white rice, warm
1 cup pineapple, diced
1/2 cup slivered almonds, toasted
1.Season fish and pan roast or grill 5-6 minutes till just cooked through.
2. Season and saute shrimp on medium high heat for 2 minutes, add garlic, onion, cilantro and tomato and cook 2 minutes more. Add tequilla and remove from heat.
3. After cooking rice add pineapple and almonds and serve.
Plate-up: Place rice in center of plate, place fish on top, then top with warm shrimp salsa!
