Mexican Madness Chicken Breasts with Spinach Mushroom Rice
4 each 5-6oz chicken breasts, boneless and skinless
2-3 Tbsp Jack Macs Mexican Madness
16oz white mushrooms, sliced
olive oil as needed
salt and freshly ground black pepper
2 Tbsp garlic, minced
1 cup celery, diced
2 Tbsp unsalted butter
12oz organic baby spinach
2cups cooked white rice
2-3 Tbsp cilantro, chopped
Option: add toasted pistachios or another healthy nut.
Method:
Season chicken breasts with Mexican Madness, saute in large skillet pan on medium heat for 5 minutes, turn and put lid over and cook for 8 minutes, take off heat and keep lid on.
In another large saute pan, add oil, mushrooms and saute on medium high heat till moisture is completely evapoarted and mushrooms begin to caramalize, about 8 minutes.
Add garlic and and celery and cook 3-4 minutes, then add butter and spinach. Cook till spinach is just wilted.
Combine spinach + mushroom mixture with warm cooked rice and top with cooked chicken.
